Thanks to a community grant from Wyndham City Council Wyndham and the auspices of Wyndham Community & Education Centre. Being offered a new venue for our monthly meetings at Central Park Community Centre.

We are asking current and past carers across Australia to tell us about their wellbeing and quality of life, how rising living costs has affected them as carers, and their experiences with accessing respite care. If you have already completed the survey, thank you. If you have started the survey but have not been able to complete it yet, or if you haven’t started, there is still time. By participating, you help make a difference to carers across Australia. You can do a short or long version of the survey, depending on how much time you have available. You can complete the survey online using this personalised link or by going to www.regionalwellbeing.org.au The survey is voluntary, confidential and anonymous, and closes on 15 April 2024, at 11.59pm. SAN CHOY BAU
San choy bau is a dish embraced by all ages. Sweet, sour and salty flavours meet tender, crispy and crunchy textures all wrapped up like a present! This recipe brings this Chinese restaurant classic into your own home. Umami-rich oyster and soy sauces flavour soft and juicy pork mince and contrast against the tender-crisp pop of bean sprouts and crunch of peanuts. And who doesn’t love having to eat with your fingers!
1 tbsp peanut oil2 garlic cloves, crushed
2cm piece ginger, finely grated
500g Coles Extra Lean pork mince
1 tbsp soy sauce2 tbsp oyster sauce
3 shallots, thinly sliced1/2 lime, juiced
1 tsp sesame oil1 cup beansprouts, trimmed
12 large lettuce leaves1/4 cup fresh coriander leaves
1/4 cup chopped roasted peanuts, optional
Heat wok over high heat until hot. Add peanut oil and swirl to coat. Add garlic, ginger and pork. Stir-fry for 2 to 3 minutes or until pork just changes colour.
Add soy sauce and oyster. Add shallots, 2 teaspoons of lime juice and sesame oil to wok. Stir-fry for 3 minutes or until heated through. Stir in beansprouts.
Spoon pork mixture into lettuce leaves. Sprinkle with coriander and peanuts, if using. Serve.
